Ingredients

  • 4 ripe bananas, mashed (about 1.5 cups)
  • 2 large eggs (room temperature)
  • 1/3 cup Greek yogurt (or 1/4 cup softened butter/coconut oil for dairy-free option)
  • 2 tsp vanilla extract
  • 1 2/3 cups (200g) gluten-free all-purpose flour
  • 1/2 cup (60g) coconut sugar (any sugar will work) note: use 3/4 cup if you like a sweeter muffin. 
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2/3 cup (85g) chocolate chips  (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with parchment paper cups.
  2. Mash the bananas in a mixing bowl until you have 1.5 cups. Whisk in the eggs, vanilla extract, and Greek yogurt (or butter/coconut oil) until fully combined.
  3. In a separate bowl, mix together the gluten-free flour, baking soda, salt, coconut sugar, and cinnamon until well combined.
  4. Combine the dry mixture with the wet mixture and stir until the batter is fully incorporated. Fold in the chocolate chips if using.
  5. Transfer the batter into the parchment-lined muffin pan, filling each cup about 3/4 full. Sprinkle additional chocolate chips or a bit of coconut sugar on top if desired.
  6. Bake in the preheated oven for 15-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out mostly clean (about 90% clean). Adjust baking time based on desired moistness.
  7. Remove from the oven and let cool for 5 minutes before transferring to a wire rack to cool completely.
